BBQ Chicken in Corn Muffins


BBQ Chicken in Corn Muffins                                                Makes 12 Muffins

2 boxes Corn Mix (7oz each)
1 cup Milk
2 Eggs
1 Tbsp Sugar
1/4 cup grated Cheddar
1lb precooked Chicken
1/3 cup+ BBQ Sauce
Sweet Pickle Relish for Garnish

1) Preheat oven to 400 (or to corn muffin package directions). Spray muffin tin with Pam.

2) In large bowl mix corn bread mix, milk, eggs, sugar and cheese. Pour into muffin tin.  Bake according to package directions.

3) In medium bowl, mince chicken and add bbq sauce. Stir to combine. 

4) As soon as the muffins come out of the oven, push the centers to form a bowl using a blunt object (the end of a magic marker is great). Spoon in chicken mixture. Garnish with relish.
